Food Bank hosts taste demonstration

A free taste demonstration on the use of several traditional pre-Columbian crops will take place on Tuesday, January 30th, from 2:00 to 4:00 p.m., at the Douglas Area Food Bank located at 660 G Ave. on the corner of 7th St. Collaborating in this presentation are BASA (Baja Arizona Sustainable Agriculture) and the Food Bank's Nutrition Education Program, both of which are partially funded by the Cochise County Health Department's "Steps Toward a Healthier Cochise County" Program (STEPS).


Foods to be featured include chia seeds rich in the omega-3 alpha-linolenic acid, which will be added to lemonade and smoothies; also, flour ground from mesquite pods which will be added to pancake mix for its fiber and nutrients (it has no gluten, and when used with other foods it helps to lower the glycemic load of high-carb foods and it prevents blood sugar spikes); and prickly-pear nectar and agave nectar which will serve as sweeteners and pancake syrup. Handouts with these and other recipes will be given to those who attend.

The BASA presenters are Valerie McCaffrey, Director, and her assistant, Laura Smith, herbalist at the Bisbee Co-op, Manager of the Bisbee Farmers Market, and certified Community Health Educator. Their presentation is in English with simultaneous translation into Spanish provided by Food Bank staff. Handouts are available in either language.
